The acidity ranges from 0.6% to 1.2% (as natural lactic acid), and the salt content is between 8% and 15%. Calcium chloride (CaCl 2 ) is present at 1500 to 3000 ppm. Each unit is packed in 260-liter drums, containing 180 kg of product. The pickled gherkins are available in several length categories (in centimeters): 1-4, 3-6, 6-9, and 9-12.
